Fried rice

Last Sunday I made some fried rice.

I needed an easy, filling meal for a lazy Sunday and I figured this Chinese Sausage Fried Rice 香肠炒饭 recipe would be good for this. In Teochew, I think I would tell my family I ate 炒饭合腊肠  (cha beung gat lat chiang).

There was a decent amount of prep work involved, so it took a while, but it was easy.

Prep

I think I may have had more rice than I needed. The recipe called for 5 cups of cooked rice, which is the most unhelpful measurement since I needed to cook the rice first and I have no idea what the ratio of "uncooked rice cooker cups" is to "cooked rice measuring cup cups". I used 3 cups of uncooked rice cooker cups, and I think I should have at least doubled the sauce.

But overall, this was a good meal that I would definitely make again. The best part of this was definitely the crunchy bits of rice at the bottom of the pan. If I have extra time, I'll reheat this again on the stove, which makes it even better.

Just like my mother, I had to add some sriracha to top this off. Well, not exactly like my mother. She would have had this swimming in hot sauce.


韭菜粿

Garlic chive cake is one of my favorite foods. It is probably #3, right after tacos and sushi.

My grandma makes the best garlic chive cakes. I think I get more excited to eat this than any other food my family makes.

Of course, it involves dough, which scares me, but my sister is here! And she likes to try making everything. So we had to try making this.

And when I say "we", I mean my sister. But I'll try wrapping them! Next time.

Look how well they turned out! My sister is amazing.

We eat these with Shark brand sriracha. I feel like I could just keep eating these and not stop. We're gonna make more next week too!


Social Distancing: Days 36 - 38

Remember how I said I was super busy at work, but I had some breathing room? Yeah, work got super busy again.

Day 36 (Thursday): I had this warm cauliflower salad on my to-make list for a while. And now I always have Tahini stocked so it felt like a good time to make it. I was a little concerned this wasn't going to be enough food for dinner, but we paired it with that pork loin we made the other day.

Yeah, that really dry pork loin. You can even see how dry it is in the picture!

But the salad was delicious. Warm salads are great.


Day 37 (Friday): One of the things I've had sitting in my pantry for waaay too long are canned bamboo shoots. I don't really like bamboo, but my sister really likes it and I don't mind it so much in curry. I had some other veggies that would go well in curry (frozen green beans, carrots) so we decided to make some.

Unfortunately, Aldi was out of chicken thighs when we went, but that's alright. This was still delicious with chicken breast. This was super easy to make and very flavorful, so I'd definitely make it again. And adding limes made it even better!


Day 38 (Saturday): Somehow with all the stay-at-home orders, I still managed to have jam-packed weekends. I had a virtual hangout with my friends during the day, and a virtual hangout with my cousins at night. So I wanted to make something easy for dinner.

I've made this beef and cabbage stir fry a few times in the past, and it's easy and tastes good enough, but I feel like it was lacking something. Maybe it needed more fish sauce and sugar. The sriracha helps though.
